Here’s a simple to the point 8” chefs, inspired by the Sabatier profiles I have always loved that have been a part of my knife making journey since day one over 10 years ago. 

Made from 1084 high carbon steel at 62 Rockwell, the blade is 8” in length, 1.5” tall at the heel with an angled profile to provide plenty of knuckle clearance on the board. Lightweight and well balanced, this is a tried and true knife profile with over 100 years of use. Made with high quality steel and a fantastic machine finished full flat grind, this knife with be a dream to use in the kitchen every day.

The handle is made with an African Blackwood bolster and a beautiful chatoyant stabilized Afzelia Xylay handle.
