Hand forged 7”x2” San Mai Gyuto. Stainless steel jacket, nickel silver shim and a Shirogami #2 high carbon core.
The blade has a full flat workhorse grind, a bit of heft in the spine and super thin behind the cutting edge.
The handle is made from Jade and black G10 assembled with a frame handle construction method in a simple western styling.
