A 7” Gyuto hand forged from a Blue Steel #2 High carbon steel core jacketed with Nickel silver, O2, 1095, 15n20 and Wrought Iron. Loads of really cool activity in the steel, fantastic edge retention and the steel will surely patina beautifully with a bit of care. The blade has a very thin edge perfect for clean precise cuts.
The handle is made using a piece of holly wood for the bolster and a blue stabilized block of big leaf maple for the handle.
