8” Chef’s Super Sabatier
An 8” Super Sab chefs knife. Drop forged around 100 years ago, in the Elephant Four Star Forge in Thiers France, these knives were never finished. I sourced the unfinished forged blanks which still needed Heat treating to harden the steel, grinding the bevels to a fine cutting edge and the handles attached and shaped. I remove the extended bolster as it gets in the way during use and sharpening and grind the bevels a bit thinner than the factory would to help increase the performance. This chefs knife is paired with polished African Blackwood scales and brass pins.
Please note, with this steel being nearly 100 years old, it is NOT quite as high performance as the modern steels I make most of my knives with. They will not have the same level of edge retention, nor will they get as sharp as the knives made 100% in my shop. They are an unfinished piece of history that I finish. They are a timeless style of knife, and make a great daily workhorse.
